Good questions, Owen.... Honestly, I didn’t even think about it, when I was replicating this old technique... My guess is that it sticks the leaves, so they don’t curl why drying out. But I think I should try to experiment without plastic wrap... Very good question! Thanks for asking🤓✌🏻

I wouldn’t think so. Oven would either dehydrate or most like fry them, which gives a very different end texture and look 🤷🏼♀️
