However, such a casual lightness of all of his recipes sets the low standard of food served at all of his franchise restaurant. Never coming back to any of his chain after the first failure.
His Mapo tofu recipe is for Korean people who don’t have the cooking skill and key ingredients of authentic Mapo tofu in their home, but use common Korean ingredients that are close to them. Most of his recipe on this show are meant to be easy for ordinary people to cook using their everyday ingredients so that they can enjoy cooking without being stressed and spending extra money for fancy ingredients. Korean people usually don’t have the Chinese sauce Doubanjiang, so he used his special sauce that is made out of Everyday korean ingredients. He also used firm tofu because silken tofu is not easy for ordinary people to cut. Of course, the Mapo tofu he made is more close to Korean taste. Most of what he teaches in this show is when you want to eat the certain dish, but don’t have the key ingredients, he shows alternatives that can make it tastes close to the dish.
Even if this would be excused as "Korean version" of MoPo Tofu.. this is a Major fail. Adding a LITER of Sesame oil??? It will completely cover up all the OTHER FLAVORs. Using Firm tofu.. in Dduck Pokki like sauce? He never makes mistake like this but.....

If adding a liter of sesame oil and firm tofu is not your preference, try changing ingredients. He clearly doesn't expect you to follow exact recipe, so I do not see how this is a major fail...

You are the one who failed to see the point of the video.
