Even with all my experience with coffee, I never had to adjust a coffee shop machine because it was already done, but when you get a new machine, you have to adjust it yourself for the best shots. It takes a little time to set up your machine properly but once its done you shouldn’t have to mess with it, just adjust the grind for different brands of espresso beans. Never buy pre ground, whole beans only. Best thing to do also is manually adjust your settings, even with “smart” machines Bean freshness- your beans need to be as fresh as possible. Roasted within the last week or few days. Old beans lead to runny shots. NEVER buy from a store, order from the roaster directly, either online or go into the shop of choice if they have a local store, always check the date on the beans. You’ll never have great shots with old stale beans. (When I buy beans I go for medium roast, single origin and organic. Standard beans are sprayed with pesticides so finding and using your fav roaster is always key, especially if they have single origin, honey washed or water washed.) dillanos is one of my fav roasters, they’re in Washington, ive gone to their location but also have ordered online and had it shipped to me in cali, takes about 3-5 days to deliver BUT they roast the beans upon ordering, so they’re always fresh. Adjust grind setting inside grinder ( I will link a video how to do this. It’s not that easy to adjust, you may want help from your man.) take your vacuum and clear out all the beans already inside, once you take out the internal grinder, take your plastic bristle brush to clean off the grinder. typically you want the grinder on a 5-7. They are tons of experienced baristas that make content on setting up your machine Use a scale to measure out beans. 18g of beans is a golden number. Do not leave beans in the grinder. Leave them in an air tight container, I got mine on amazon. Shots should run about 20-25 seconds. Too fast means runny shots, poor expresso ectraction. Too long causes burnt shots. Getting a scale with a timer on it helps a lot but I don’t time mine, so over time or if you’re in a rush you don’t always have to use the timer. Once you know how your shots need to look, you won’t need the timer. Buy a double shot espresso glass or 2 with measurements on them is great! Helps you know how much coffee you’re yeilding. I have horrible tmj from clenching as well! Make sure you see a tmj specialist (not someone who just dabbles in tmj) for a consultation and xray:) this way they can properly diagnose and create a treatment plan for you🫶🏻🫶🏻 A nightguard + masseter botox has worked wonders for me!
