the corn is delivered (basically frozen but it thaws) with the poblano peppers already mixed in. the employees add red onion, finely chopped fresh cilantro, morton's kosher salt, and minute maid lime juice (not the sweet kind) but any lime juice works just add everything to taste cause in store its mixed in a giant bowl lol

I just did it and it’s perfect!!! I’ve been wanting the rice but didn’t want to pay extra at chipotle and I bought a rice cooker for 10 bucks on sale at Amazon and it’s just PERFECT! I did it exactly how u did it I did add a little more pinch of salt and little bit of more lemon and lime and it’s perfect I just defrosted chicken to make something for dinner. So I used the rice in a bag and worked great!! I used two bags put the bay leaf in the water not sure if it worked and just winged the measuring of the rice oil kosher salt cilantro lime and lemon juice and it was sooooo good
If you cannot find rice bran oil, 1 tbsp of stir fry oil and 2 tbsp of olive oil also makes a very tasty rice with this recipe! Not the same, but it adds a nice savory/garlicy flavor.

Yep. Exact recipe. Brown rice is the same recipe, except half the salt. One thing: also add oil into the rice cooker before adding rice. 1st oil and 2nd oil are both important.
This past weekend I was at chipotle and they ran out of cilantro lime rice. And the nosey girl I’m , I saw the cook behind make this. This is exactly how he did it. They were pretty generous with the lime juice juice sale and cilantro.
Probably because they were making a much bigger batch plus if they were out they were on some hurry up and get more up to the front to service these customers
so no only are you nosey but a liar. They dont use lime juice. It's a special juice made for them that has three different fruit chemical imitation copy cat combos in there.
I've been using jasmine rice to try and make this and the flavor is always NOTHING like chipotle. Im going to try this recipe and hope for the best. I was never on grill when I worked there, but the rice bran oil DEFINITELY sounds familiar and I hope that was the secret I was missing this whole time after so many failed attempts!!
The issue was using Jasmine rice! Jasmine rice is very aromatic, and if you know that our sense of smell, or lacktherof, can definitely have an impact on our ability to taste...then you have an idea. Use long grain rice. Basic long grain rice.
That's pretty different from how I learned to make rice. I don't got a ricer cooker, I am the ricer cooker. I'll give this a shot though. Never heard of rice bran oil. Hope it comes out yummy
I've never had Chipotle so have no frame of reference for how it's "supposed" to taste, however I made this today to serve alongside mini pork meatballs in an Asian sweet chilli-style sauce. The acidity of the rice nicely offset the sweetness of the pork and chili sauce.
I had an old comment that got deleted about chipotle having dark "cooked" looking colantro in theirs and someonenreplied m0ri I know you commented this a long time ago, but when it looks like that its just been sitting out! The cilantro darkens and gets limpier after being exposed to the heat in the wells. After about 30min out it will start to do this, so its not super old but greens are super sensitive to temp! It definitely mellows the flavor and after working there and having it fresh out the bowl, I actually cant eat it when its wilted. I like the fresh zest more 😂 you can achieve the same thing by putting in the cilantro in the rice cooker and leaving it for a while REPLY

It can be hard to find fresh, but try "culantro". It's a herb whose taste is said to be similar to cilantro (but stronger), and it doesn't trigger the "cilantro is soap" response. Look for it in Latin American markets. Otherwise, just substitute parsley for cilantro in any recipe. The flavor is different, but it's a similar enough herb that you can swap them in most recipes, especially if the herb is just a garnish. I rarely buy both cilantro and parsley at the same time, I just buy whatever is most appropriate for what I plan to cook and I'll use one to substitute for the other as needed.
Will be trying this - minus the cilantro. As a person who cannot tolerate cilantro, I wish Chipotle made their menu items in a way that can be ordered without it. The rice can, but the people working always seem annoyed when I ask for plain rice.

Late comment here, but former employee of chipotle here and we never added the salt or lemon juice. We had gallons of fresh lime juice. And this was never used on the chips. The chips only got juice from fresh cut limes.
This is the literal recipe. I worked there too. The only thing we did different was adding the oil into it before cooking the rice
