It’s not necessarily freeze dried. You can also dehydrate raspberries if you blitz them in the microwave, only takes a few minutes

Wow, I only realized after reading these comments that most people don’t really appreciate beautiful plating 😄 I think it’s super creative. and for those complaining about the actual potion size, this is how much dessert you should eat and it usually comes after you finish all your main course at a damn expensive restaurant! You cut a piece and drag it along the decoration a little and eat it so you get that on the piece! That’s usually advised :D
