    Recipe: Moist Lime Cake
    Ingredients:
    225g (1 cup + 2 tbsp) granulated sugar
    280g (2¼ cups) all-purpose flour
    120ml (½ cup) vegetable oil (or 150g unsalted butter, softened)
    3 large eggs
    2½ tsp baking powder
    ½ tsp baking soda
    ¼ tsp salt
    3 teaspoons lime zest (from about 2 large limes)
    120 ml (½ cup) freshly squeezed lime juice
    80 ml (⅓ cup) milk (to keep the batter moist with extra flour)
    1 tsp vanilla extract (optional)
    Powdered sugar for dusting (optional)
    Instructions:
    Preheat the oven:
    Preheat your oven to 175°C (350°F). Grease and line a baking tin (approximately 25 cm x 20 cm) with parchment paper.
    Mix the wet ingredients:
    In a large bowl, whisk together the oil and sugar until well combined. If using butter, cream the softened butter with sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the lime zest and vanilla extract (if using).
    Prepare the dry ingredients:
    In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
    Combine wet and dry:
    Gradually add the dry ingredients to the wet ingredients, alternating with the lime juice and milk. Mix until just combined, making sure not to overmix the batter.
    Bake the cake:
