Cowboy Beans Recipe - As seen in 'They Call Me Trinity' - Ingredients and method in description

  • Cowboy Beans as seen in 'They call me Trinity' and many other Spaghetti Westerns from the 60s and the 70s. I grew up in the 80s and 90s and used to love watching the most popular westerns of this genre, such A Fistful of Dollars, For a Few Dollars More, The Good the Bad and the Ugly directed by Sergio Leone with Clint Eastwood and in later years of the genre the "Trinity" films directed by Enzo Barboni with the main characters played by Terrence Hill and Bud Spencer.
    Often, especially in the Enzo Barboni's era, the hero would show up dirty somewhere, at the end of some kind of journey, very hungry and find his way to a feast of baked beans served directly in a cast iron pan, accompanied by a loaf of bread and cup of water... as a kid, no matter the time of the day or night, these scenes of starved hero and baked beans used to make me really hungry. Now as an adult, living in my own sort of ranch (‪@libakan‬ ) I finally have the luxury of being able to recreate this dish from whatever sources I could find online and make it my own... ideally you approach this dish starved and replacing the water with a cup of red wine.

    Ingredients (x2 people):
    1 cup of pinto beans, red kidney beans, black beans - any one-kind or combination.
    1 can of diced of tomatoes
    1 fresh tomato diced
    1 green pepper and/or hot pepper (optional)
    1 cup of diced lard or smoked ham or ham shank or even bacon
    1 medium yellow onion diced
    2 to 5 garlic cloves (depending on your love for garlic)
    1 to 2 tbsp of olive oil (or even bacon fat if you have it)
    1 pinch of brown sugar to take away the acidity of the tomatoes
    Salt and pepper to taste
    1 loaf of bread
    1 quart of wine
    Method:
    1- make fire (preferably for the whole experience) or warm pan to medium-high heat
    2 - drizzle 1 tbsp of olive oil or bacon fat (also at this stage you're supposed to start on the wine)
    3 - throw in peppers first (if any), toss for 5 min, then diced onion toss for another 5 min until transparent and tender
    4 - add garlic, toss for a 2-4 min
    5 - add lard, ham or bacon, toss once in a while for 5 to 10 min depending of heat
    6 - add fresh tomatoes diced, pinch of sugar, steer for 5 min
    7 - add salt if needed, to taste (the lard/ham/bacon would generally already be quite salty)
    8 - add can of diced tomatoes, steer in for another 5 min
    9 - add can of beans (with some fo the liquid)
    -- at this stage we're looking to get some kind of granular mix not too liquid but not too sticky/solid either. If too liquid just leave it on the heat longer and steer, allow for the liquid to evaporate.. if too sticky/solid, add a bit of water, steer, and let it soak for a few min for the flavours to take in ---
    10 - Whilst you are adjusting the texture and keeping it warm, put your bread on the fire grill (or in the oven) for a few minutes , make sure you check and turn it around, you're looking to get it toasty so that it cracks on the outside but is soft and warm inside. Also, add pepper to taste.
    11 - Serve - And yes, I know a quart of wine may be a bit much for some but hopefully by this last step you would have gotten the bottle to a more reasonable level.

    cooking and eating food outdoors has a specific taste and atmosphere, my first memory of eating breakfast in the garden with mom as a 5 years old kid, blue sky, fresh air.. can't wait for spring and summer to go to cook in the forest :)

    fun fact: the original recipe, as told by Terence Hill himself, was much simpler and included just onions, black beans, chile, tomatoes, tomato puree/sauce, water, and loads of pepper.
    Yes it's odd that the recipe did not involve any sort of lard, bacon, sausage or jerky, but according to the man himself that's how they prepped them, and were admittedly delicious enough to make him actually finish the whole pan during shooting...but then again he had fasted 24 hours in preparation for the scene as to pass for a man that had just crossed the desert, and the old Italian saying goes "the best spice for every meal is hunger"

    I made this recipe with an electric stove and without the wine.
    I'd have to say it was fantastic recipe. It tasted excellent, easy to make, not as much cleaning since it's cooked all in one pan, and I had left overs that I ate pretty much every night it was that good. 10/10 would make again.

    Appreciate the video. But the original recipe is not as complex. Hill in an interview stated; "It is spicy! For the sauce you need chili peppers, olive oil, tomato sauce, onions, salt and a lot of pepper! Fry the onions in olive oil in a saucepan, add the remaining ingredients and cook until the beans are tender." Thought I won't deny this version you provided too is delicious.

      That's exactly right, there are a few scenes like that from either movies or cartoon or even comic books that seem universal. Asterix and Obelix banquet scenes for instance... my daughter reads them and makes her hungry!

    as a Mexican, those beans in the movie could have been frijoles charros, which we put bacon, sausage, tomato, onion, garlic.

    Hilarious how this scene made me experiment with making cowboy beans without following a recipe and even knowing that its an actual dish. I didn't bother researching but figured, it has the base ingredients it does, then added some sort of meat or lard, depending on what I had available and it turns out to be delicious. These days I use black beans, pinto beans and kidney beans, onion, jalapenos, tomatoes or sauce, garlic, salt, pepper, paprika, either cooked in lard, with bacon or ground beef or both, sometimes sausage, but its really good with just butter and no meat as well.

    Cut bacon into squares and cook over medium heat to render the fat. Add onions and cook / stir for about 10 minutes. Add garlic and cook / stir about 5 minutes. If available, add a can of Rotel tomatoes and peppers. Add beans and heat through. Don't crisp the bacon! Just make sure it's cooked through. Ground meat can be used as well, cook before the onions or in a seperate pan. Chorizo, which is already cooked, can be used but omit the peppers unless you like it really hot. A little brown sugar or better yet molasses is good too.

    Always hated that scene, but not for the food. I kept wanting to scream, "Wash your hands!" over and over again. I'm not OCD when it comes to personal hygiene, but damn...

      @@libakan Some interview said that was a simple dish. The tavern also looks quite simple. Salted pork was a common thing at the time but... The owner says just "a plate of beans", somehow I imagine it's just beans with peppers and seasonings, maybe onions.

    you dont put tomatoes in beans. the red colour comes from the paprika powder.

      @@libakan its the same with hungarian goulash. people think they must use tomatoes to reach the red/dark colour, but its only paprika powder that makes the colour.

      They didn't have paprika powder readily available in the American west and was not in common use. So they wouldn't have used that. In fact Terrance Hill himself gave the recipe and NO paprika powder. What are you saying lol @@adrianog4148
