Although I appreciate the quickness of this recipe.. I ALWAYS cream the cream cheese with the egg and sugar before adding the pumpkin purée. Those cream cheese lumps don't all cook down and they give the pie a weird spotty look once it's baked.
I find that if the cream cheese has been sitting out 'til it's room temperature, I hardly get any lumps and don't need to do any extra creaming. I had made some strawberry cheesecake with the cream cheese left out for about an hour and found I only needed to cream it with a wooden spoon for a few seconds before dumping the rest of the ingredients in there to prevent lumps.

Turned out fantastic. Making this every thanksgiving now.
I made this a year or two ago and the lumps were still there , still delicious though. I’m making it now , I mixed the cream cheese with all the dry ingredients first then mixed in everything else for the filling and it came out smooth and creamy 👍🏼
It needs a water bath that's why it cracked all on top. The cream cheese doesn't melt away you need to work it. She covered it so quick. She also turned the slice so we couldn't see it. Laura why?

I haven't tried this recipe yet but I am wondering if orange zest or orange liquer in the crust or filling would add a special touch to this cheesecake.

I've made this twice now. I did not add the sour cream topping because I've had the sour cream topping on cheesecakes before and me and my family all hate the way it tastes, so I just left that out. :) It's delicious! the sour cream sauce reminds me of the spanish treat/dessert fresas con crema, usually you can use any fruit but its mainly strawberries (fresas) and the crema(cream) is made using sour cream and sugar, when I tell people its that simple to make every one is always shocked its sour cream!!!
What is the weight of the cream cheese package? Because I'm not from the US and thus not common with the package sizes, and the internet tells me that it differs... it's not listed on your website either. It looks so good, can't wait to make it!!
@4countrygal4 i just used a different gramcracker crust. and it was in the oven with the heat on for 1:15, stayed in the oven with the heat turned off for 30 muinets and left in the firidge for 6 hours

if i wanna make it in mini muffin tins for individual servings, how long would i have to bake the cheesecake? still an hour? is the cream cheese an 8 oz or 4 oz package? how many mini cheesecakes do you think this would make :T lol
You could always try adding just some plain graham cracker crumbs if you don't have the "spiced" graham cracker crumbs. Or use plain graham cracker crumbs and just put some ground cinnamon into the crumbs. But, other than that I would not omit the crust. Hope I helped! :)

I think a red velvet cheesecake would be similar to a regular vanilla cheesecake. If you recall from her red velvet cupcake video, she mentioned how it's just a vanilla cake with a touch of cocoa. You could easily incorporate that into a cheesecake form! :) -yeah, maybe 5 months late... but oh well!-

Pumpkin cheesecake would be yummy. I always loved both pumpkin pie and cheesecake. Again, a skinny slice would be just the right amount.
