It is very true that the oils can go rancid. But the new oil which is not been cooked can survive upto 1-2 years without going rancid. And when the same oil is cooked again and again then that basically gets oxidised in an early stage. So in the case of pickles, we use oil as a presevative because it acts as the best medium to prevent the contact between the dried and salted fruit or vegetable with air and moisture. Thought we store the pickles in air tight containers but if we don't use oil then the pickles can easily come in contact with the air whenever the lid is opened. So as long as the pickel stay dipped in the oil, the pickle survive.
Volatile means a substance [liquid or solid] that easily gets evaporated at normal temperatures OR Likely to change suddenly and unexpectedly , especially by getting worse
