You can look and see every coat the game has in collection I believe, instead of guessing because the game doesn't follow genetics that much. It's just a chance for your horse to pass a rare marking or color and then they randomize it sometimes for a surprise. Like the frost coat( blue horse)

I don’t agree with horse racing in real life, but I enjoy it in games because no horses get damaged there.
Except my phone when i get frustrated because I can't level up💀-
I also don’t agree with holding tornados and fireballs in my hand and throwing them at other horses in real life but in game it’s fun ;) :P

You can change the names of the horses by going onto their passport and up by their name there is a symbol click on that and there is lots of name choices
btw you can change the name in the passport tab when you go into stables
