1:18 I learned this from a manhwa before I dropped it and it worked. Wet the knife before you start going at the onions. Keeping the blade wet keeps the onions from releasing sulfides into the air.
I cut onions with a wet knife every single day, doesn't really work. What works is chewing some bubblegum. Or some dry lentils in my case. Webtoons got the most misinformation in there, don't trust their stuff.

When I make my Magic Meatballs, I use a blend of beef and turkey. The beef is a much stronger flavor than the turkey which makes it taste almost like pure beef, but with less calories, sat fat, sodium, etc. The turkey makes them subtly milder which lets my spice choices shine through.
Protip: re fry or sear your meatloaf slices before you serve them up. You get more of that lovely browning flavour, and is pretty much mandatory for a beef version of this

Hmm.. A gigantic "Frikadelle" (German) with extra spices.. But for real, we also call it meatcake as in "Fleischkuchen" / "Fleischtorte".. Looking good, had some some years ago, it was 50/50 beef+pork ground meat and the spices/ herbs were more "mundane" (My Grandma didnt like much foreign flavour)..
I would probably replace the Steak Sauce with Oyster Sauce and Liquid Smoke instead. I might also use Patis(Filipino Fish Brine Sauce) instead of salt to that it gets more Umami than salty. That said, i might actually do this at home.
You can up the game of any meatloaf-adjacent recipe with a very generous splash of cooking wine, and a rather sparing dash of fish sauce. (Spanish red is my favorite wine for this.)
Fun fact, you can pasteurize chicken by holding it at a less than safe temperature for a longer time. Think holding the meat at 150F for around three minutes, and 155F for around a minute. I don't know if ground fowl is like store bought ground beef where because of it's creation process, you really need to brown it completely to be safe, but I thought that was fun to learn.

Might have to try something like this the next time I make meat loaf; I always had the sauce and most of the flavors glazed on top during oven cooking, but mixing them throughout, extra stovetop browning with a lighter sauce after oven cooking sounds lovely

This isn't far off from the meatloaf recipe I make all the time (even down to the lean ground turkey) but the technique of the cast iron pan so it can be a cake format is absolutely a game changer. It also looks like it'll keep the cook time around the same, since my turkey meatloaf recipe takes a full hour in the oven in the normal loaf pan. Thanks for the video!
"Turkey might be dry." That's why you need so much onion or any kind of fried vegetables (I would try this with carrot or pumpkin too, to make it much sweater and add some fiber, juiciness and mass to it).
