I'm a bit late but that "thingy" is called a harmonic. It's done by not fully applying pressure to the string. It's surprisingly tricky and takes a bit of practice. If done effectively you get the awesomeness in the video. Otherwise it's painful to listen to. I'm not quite as good as Paul, so I still miss these every now and again but I'm trying to get better.

I'm 15 been playing the guitar since 11 and always use tabs it's so much easier I only use music sheets if I'm too lazy to make tabs or if there are no tabs available online, either way there is no set way that people who play an instrument do things music is played however you want to.

I listen for the chord progression in the song and work my way into incorporating the melody into the chords. Hope this helps!
