Hello Gita ma'am. Today in the ridge gourd recipe you asked people to check for bitterness in the gourd and discard it in case found bitter. But there's one simple remedy tried and tested by me. Immediately after peeling the gourd, check for bitterness and if found bitter, take a bowl of salted water, as in how we do for brinjal, cut the bitter ridge gourd into desirable size pieces and soak them in the salted water. Just add the pieces to the curry after squeezing all the water out and magically the bitterness is gone. Try it ma'am. You won't regret it. Also may I request you for sundakai sambar recipe please.

Namaste Gitaji, I love ridge gourd with roti/chapati. I've learnt to make this from my mom, and the cooking process is a little different from yours. I sautéed fenugreek seeds, onion, garlic, curry leaves, and green chillies in a pot with some oil, then add the chopped ridge gourd and tomatoes, ground coriander, turmeric, garam masala, salt and blackpepper, stir and let it cooked for a few minutes, then add very little water and cooked until done; mashed slightly with a potato masher. I'll try it your way the next time I make this; thank you for sharing your recipe and God bless.

Peechinga in malayalam...we remove its skin, wash it well,. drain it and along with onion sliced, salt, chilly powder, salt,. crush it nicely in a mixi..then put it in a pan and fry it withour oil,. keep stiring till it becomes dry. very tasty to have it with rice and curd....
Show your prowess in making Ridge Gourd thuvayal and pachadi too! Your 'tukda' in between cooking as in kacheri is 'value added' and a delight! P.S. Some prefer to add cooked . moong dal also!
