    We love using dry or fresh lemongrass which tastes like rose and ginger is yummmmm with any fruit.

      Me too. I learned about the benefits of fermented food and drinks, and I just started making kambucha. I bought the scoby with the tea but didn’t know much about what to do. Her videos helped me so much. I just did my second ferment on my first batch after watching many videos. When you don’t have someone to teach you, it’s great to find someone in RUclips that can be like that friend that teaches you the way. I appreciate her videos very much!

    I love roselle flower (made into simple syrup too), it gives a berry-like taste. Turmeric+tamarind (blend into paste) is also my favourite.

    For those who want a floral and herby brew
    Raspberry Lemonbalm Rosehip is a recipe Ive been doing and it has a delightful floral flavor.
    I tend to use dried herbs. But I brew it as an herbal tea.

      Ive used dried basil for making strawberry basil kombucha, like I said basil as herbal tea, and it produced a decent flavor

    I’m trying ROOBIOS ROOTBEER, I got on Amazon. Didn’t think to make it a Syrup. I’m currently soaking the herbal R R in the Refrigerator-as a cold brew concentrate. I’ve then added some to the second ferment with added sugar. I like the ‘idea of trying to make it as a R R syrup by heated infusion. Bottle it to have on hand for flavoring. And then when I want R R put it in a swing top bottle it for the fizziness.

    I never made a simple syrup to add in my kombucha before yet I have used tea bags emptied the dry tea as long as it does not have any caffeine in it. That was a simple way to do some flavoring and then on top of that I added something sweet pomegranate or grape juice or cherry

    I love using crushed juniper, goes nicely with rosemary. Gives a sort of gin flavor.

    Interesting... I like mint, especially with mango and lemon... but the least I like is basil. I can't taste the rosemary... but I'm dying to try the lavender

    I’ve been grinding whole cardamom and adding it directly to the bottle for second fermentation, along with a spoon of honey. I love the strong flavor I get. Is the advantage of making a simple syrup that it brings out more flavor, so you need to use less spice?

    Strange - fresh mint works really good for me. Tastes exactly the way you would expect it to taste.

      I agree. I have used spearmint fresh directly to the 2nd ferment bottle and the result is very fresh and refreshing. I also pair mint with ginger, tastes great.

    Hi. Great vids. Add your freshly extracted mint to your brew right before you drink it as opposed to letting it ferment with your brew. Happy gut microbiome to ya✌🏼

    Really helpful thank you. Looked for book, but as in UK not available without paying heavily for postage sadly. Just at beginning of my Kombucha brewing journey and currently unsure if the locally produced unpasteurised lovely tasting brew that I’ve brought is helping my digestive issues - or not, due to side effects (hoping that it’s helping sort it, rather than upset)

    I have the same issue with mint.
    I tried a cucumber mint a while back, and I kept nervously checking it for mold due to the green tint the ingredients lent to the pellicle
    For some reason it was carbonated to an ungodly level. One of the few brews to really spray about when went to bottle, and later taste.
    A part of it was that the harvested mint had already flowered, forget the term but that alters the leave's flavor apparently
    But still 😔

    Several months ago I bought a canister of dried lavender flowers with no clue why other than o like lavender smelled products. It’s been sitting in my pantry since. I also planted rosemary last summer and have since learned to start fermenting my foods. Now I know why o both them both. Thank you! Oh, quick question… do you 2nd ferment with the rosemary by itself? With fruit which one? I know it’s in another video but I cannot remember. It’s my first successful batch of kombucha being bottled today.

    The reason that mint changes the profile of the kombucha is due to the oil contents of the herb.

    For some reason I find that the kombucha is less potent after second fermentation than after 1st, even when using strong flavors or not much flavoring just sugar

    I have good experience using fresh Mint. I think it depends on the type of Mint ... one of my Minds is not fragrant and the other is very nice. So Mint is not equal to Mint ... it depends on the type ;)

      never tried it in kombucha only in cocktails but I've found fresh spear mint vs fresh sweet mint are incredibly different flavors in a syrup.definitely something to consider

    So bad you have not had good results w mint. I have had great results with spearmint directly into 2nd ferment.
    Have you used fresh from the garden? Or you buy yours at the supermarket? That might be the difference.
    I can imagine those great spice mix with apple juice as you said...yum.
