My brother in law does something very similar to this with some of his venison grind, he makes a meat loaf like this with seasoning and cure agent, but in a wider shallower pan. Then he smokes the loaf, and slices it thin to make "venison bacon". It's really tasty and the slices freeze well in a vaccum pack.
