Dahi walay Baingan Serves 5-6 Recipe in English:
Ingredients:
-Baingan (Eggplant) slices ½ kg
-Namak (Salt) ½ tsp
-Cooking oil 2-3 tbsp
-Cooking oil 3 tbsp
-Lehsan (Garlic) crushed 1 tsp
-Adrak (Ginger) 1tsp
-Zeera Powder (Cumin Powder) ½ tsp
-Lal mirch powder (Red chili powder) 1 tsp (to taste)
-Garam masala powder 1/4 tsp
-Namak (Salt) 1 tsp (to taste)
-Haldee powder (Turmeric powder) ½ tsp
-Dhaniya Powder (Coriander Powder) 1 tsp
-Chaat masala 1 tsp
-Pani (Water) ¼ Cup or as require
-Yogurt ½ kg
-Cooking oil 3 tbsp
-Zeera (Cumin seeds) 1 tsp
-Sabat lal mirch (Whole red chilies) 4-5
-Lal mirch (Red chili) crushed (to sprinkle)
-Coriander leaves (to sprinkle)
Directions:
• Cut eggplant in slices and spread some salt on them.
• Add some cooking oil in the pan and grill eggplant slices from both sides until golden brown and set aside.
• In wok, add cooking oil, garlic paste, ginger paste, and mix well.
• Add cumin powder, red chili powder, garam masala powder, salt, turmeric powder, coriander powder, chat masala, mix well and cook on low flame for 3_4 minutes.
• In bowl, add yogurt and whisk well.
• In frying pan, add cooking oil, cumin seeds, whole red chilies, and fry for few seconds. In serving dish, add prepared gravy, fried eggplants, and prepared yogurt.
• Repeat the layers alternatively until you reach the edge of the serving dish.
• Add tadka on the top -Sprinkle crushed red chili and coriander leaves& serve! Хобби
