Yes you can thin slice anything. The key will be that the onion or other veggie fit in the holder. That is what will determine the size that can be done. The thinness is not an issue.

How easy is it to clean?
Super easy. Dishwasher safe and there is a dual sided cleaning brush that comes with it to brush off anything that may stick.
