I used an ice cube to make the adhesive on a bandaid stuck on a plush toy brittle.It came away more easily after a few times of rubbing it. The toy was that very thin, fine plush. Someone told me to put him in the freezer but his little owner wouldn't allow that!
Have you ever tried goo-gone on sticky things? I’m not sure if it would be too strong of a chemical for fabrics but the band-aid issue made me think of it.
If a large patch is missing I don't know any other way than to find matching fabric and patch it with that. But even huge holes can be closed and different sections of fabric can be united with the simple ladder stitch. I don't know how damaged your plushie is. Could you sew the parts you have left together? Maybe it will be a bit deformed, but depending on where the damage is and how fluffy the plushie is, maybe it is not that visible that some part is missing? Otherwise, I recommend looking for a similar fabric and maybe using fabric dye on it if you can't find the right color.
