It doesn't matter if it's difficult or tedious, just knowing exactly what you have to do at every turn is so satisfying and your only worry is finding a faster or better way to do it.👏👏👏

This was fascinating to watch. This man has a "feel" for making good breads. Some important ingredients roughly measured (yeast, salt, leaveners), but others with a bit of just knowing what the dough should look and feel like. Extraordinary talent. Completely ambidextrous in his kneading technique. The ratio of filling to bread on some of the pastries seemed very disproportionate, but that is only my opinion. This man is an incredible baker and artist. Impressive to say the least. Also - FANTASTIC job on the filming!!
When you’ve been doing the same measurements since you were 14… He knew what the dough needed just by looking at it and hearing it. Isn’t that amazing? 🥲 thank you for your comment! 🥰
This man and his wife are heroes of the people. Making bread is like giving life. They are worth more than a 1000 rabid private equity partners to any village or community and will be here years after all the private equity partners have been guillotined in the forthcoming world revolution. A medal for this man and his wife.
I can honestly say that I’ve never seen a mixer like that. It seems to replicate a human’s arms and looks like it does a better job than the rotary dough hook style. Clearly a master of his trade! Beautiful. Kneading two moneys at a time was just showing off!😊
They speak valencian, and they made many bakery things from this area, such as PANQUEMAO, MONA DE PASCUA, COCA DE PANSES Y ANOUS (Pastry of raisins and wallnuts) etc... Vixca Valencia! Best bakeries of the world. I worked a year while studying high school in a bakery, 3AM all weekends and learning to do many things they show. It's a very very hard work, never holidays almost never resting.

Yeah. I have worked in small and very large corporate kitchens and there’s just no way this would meet their standards for cleanliness, to say nothing of the problems it would cause when the Board of Health does their inspections. But the final products look delicious! 🥖🍞, so there’s that.
얼마전 스페인 산세바스티안 소재 해안관광지 빵집에 갔다가 정말 놀라운 광경을 보았다 . 오후 2시쯤 되었는데 무수한 식빵종류들을 주민들이 줄서서 거의모두 사가고 텅비었는데 모두 식사대용 빵들이었고 한국처럼 달달한 빵은 안보였다 . 그런데 정말 놀라 자빠질일은 품질이 좋은건 말할 필요도없고 가격이 사람 머리통만한것 ,팔보다 긴 바게트 , 넙적다리 만한것들이 불과 2~3 유로 였던것 . 20 센치 넘어도 1유로 . 다시보고 또 다시봐도 가격은 맞는것이었다 . 한국의 빵집은 손바닥 반만한 달달한것들이 5천원이나 한다 . 스페인은 두루돌아보면 정말 사람살기 좋은 곳이라는 느낌을 받는곳이다 . 착하고 식재료 풍부한곳이다 .
Thanks for your comment! People in Spain are used to get this kind of pastries for lunch, and actually the prices are really cheap! Recently I’ve been in Korea and are a a little bit more expensive than in Spain, but the quality is out of this world! I loved the salt bread and yellow cheese pastries! 🥰

Those are called "twin arm" mixers and they are very common in Italian pizzerias which I believe is what they were originally designed for.
The Italians have done some great engineering!
Here in Germany, every baker does it with two hands too. It's just twice as fast.
