It just reminds me that I should explain more in my videos :D To answer your question: The first 5 mins of cooking the bones (not the meat) is to remove the impurities which only carry bad flavour of the bones. Dumping out the pot after the first 5 mins helps to make your soup clear and to save time skimming off the foam later. Don't worry about wasting the flavor because the first 5 mins you just mostly get the bad flavour of the bones :-P

You can also make Banh canh with mushrooms and vegetables. Or try out the "Fried tofu in tomato sauce" recipe using soya sauce instead of fish sauce. It's really good!

For recipe #1, you have to use boiling hot water. If you use cool water, it does not work. For recipe #2, you need to microwave until the flour turns into a half-cooked paste. Good luck next time :)

Being originally from Dalat, I love banh canh, and I was thrilled to find your video here. I just tried to make the noodle using the cutting method and am failing pretty miserably. I mixed the rice and tapioca flour, boiling water, mix with a spoon, and when I tried to knead with my hand, the dough doesnt become non-sticky. It literary bind my fingers together. What am I doing wrong? Thanks very much - your loyal fan.
When you pour too hot water into tapioca starch, it will cook and turn very sticky. You should mix up the rice flour and tapioca starch first. Then add hot water (not too hot) to knead. Hope you get it next time :)

you can store the annatto seed oil for weeks if you don't let anything conteminate it

It's the matter of personal taste. I add abt a few tsp salt, but it all depends how much water you have and how salty is your salt.

XuanHuong Luong No you should mix them together first. Water at 80ºC = 176ºF would be good

Traditional method uses stove top, but you need to control the heat well and keep stirring. Microwave method is easier and faster
