Hi Phyllis, I just whipped this up for my hubby’s dinner. It was so easy and I’m pretty sure he will love it. I laughed so hard when you said the roast was "tough as shoe leather so I put it in the food processor and ground it to smithereens". I agree... roast is VERY high priced. Well now you can call yourself "the meat slayer"!!

Hi Ms Phyllis! We made a big pot of chili last night so have some left over today that I'll bet will work just fine in this bake over! I even have some Jiffy Corn Bread Mix in the pantry that needs to be used so this should come together very quickly for supper this evening. Very creative way to use that the leftover roast, too. I would have tossed it in the food processor and chopped it to smithereens, too. Those cuts of meat are way too high-priced to waste! Glad to see Steely & Sonny making a guest appearance & are all trimmed for Christmas. Sounds like you and Mr Bucky are just about all set for the holidays! my mother made a similar bake over! she'd make an absolutely huge pot of chili for supper one night, and then to stretch out what was left, bake the rest this way a few nights later. she often made it in the summer time so you could eat it cold if you liked. we always had it with a side of fresh peas mixed with sour cream, or cottage cheese. so good! you've inspired me to make one again! :)

My 10" cast iron skillet is my favorite cookware. I've used it for years and it is slick. Recently I discovered a non-stick cast iron skillet which I've been using for a few weeks now. I like it very much as I don't have to season it at all. It works just like a well used cast iron skillet. It is also 10" which is a good and manageable size. Miss Phyllis I like one skillet meals such as you made in this video. Thank you for another great meal.
Oh my gosh! You are making my mouth water. When you showed the plate and the apple slices on the salad looks delicious! This ones a keeper that I think the grandkids will love and their dad and me too!

Jiffy cornbread mix has been my go-to, and it was my mother's go-to. (Guess where I learned it from?) I have discovered adding a happy teaspoon of sugar to the batter and letting it rest. This improves the flavor, texture and rise. Thank you, Phyllis, for sharing.
Phyllis this meal looks really really good. I know that I would eat this for sure. My cast iron pan is too small for my whole family so I would have to find another pan that has a handle that I can put into the oven too, but I would try this. I like your salad with apples too; my mother-in-law use to make ice burg lettuce with pears. Very delicious!

I remember I used to purchase Jiffy when my children were little, back then they were 4 or 5 for a dollar but I am sure they cost more now. They were always good to have on hand. I will have to look for them when I shop next.

I had a very similar meal here today, Phyllis. That Jiffy cornbread mix is an old company (1930) here in Chelsea, Michigan. I remember driving my (at the time) grade school children on a field trip to the factory. Each child got to choose a mix to take home, of course my little girl chose the chocolate icing mix. Lol. I had my poodle, Rudy groomed yesterday, I’ve watched your videos of you grooming your poodles, I’m going to get the equipment and give it a try, not sure which is the best shaver to buy.
Get a cordless one with a lithium battery it will make grooming much easier and they recharge very quickly. I can groom both dogs on the same charge. Also you need to get one of those pencil trimmers for dogs feet, it will not nick them and gets into the webbing on their feet and pads.
I've made something very similar to this and called it Tex-Mex Cornbread, and I usually pull out some saved left-over chili from the freezer. to use My family has enjoyed it cut like cake from the pan, so the cornbread is on top, and we add salsa, onions, more grated cheese, etc. This is so yummy. Once again, your video is making me hungry!!!
That looks and sounds so good. I'll have to use biscuits for my husband though. He doesn't like corn bread. So I'd make 2 versions and have a little of both 😀.

Next best thing would be a stainless steel skillet with a oven-proof handle or stainless steel handle.
