Indeed, the hitters are able to hit these beautiful line shots due to the setters putting the ball right next to the pin. That maximizes the width of their hitting window.
Outside hitters, this should be your default shot, not angle. As long as the blockers are leaving line open, hit it. If they want to start taking your line, that's ok. If they do that, they are increasing the distance that the middle blocker has to laterally move to close that block, which can often leave a split block (if the middle doesn't float, which is a non issue), of which you can then hit through the seam. Or, if you have the vision that an OH should have, you can see the line blocker's outside hand and tool it intentionally.
