Great vid. makes some good points I've been looking for to make a different version of dnd play. The way I wanna do "gritty realism" is by having hp restore relatively the same but play a differnet roll, more as a fighting stamina, like your ability to keep fighting. Mortality is simulated with injuries. you don't die cause your hp hits zero, you die cause you bled out kinda vibe, and injuries take weeks to heal.
