      @@joelthomas8179 that is 100% incorrect. The family made their own independent series to send to all networks which they did for years. Finally A&E had some open time slots so they green lit production for 3 episodes as a test. The show is completely fictitious.

    Love this guy. Worth many millions of dollars, wears a t-shirt he bought from Fred's dollar store during college (Wal-Mart wasn't around yet). And he measure his life not by dollars but by a currency only redeemable through Christ. How can you NOT respect this man? Plus...he was a world-class athlete!

      You know everything their doing is gonna make r elders who cant afford shit have 2 go above dollar tree , ALOT OF EXTRA HEALTHCARE SUPPLIES ETC WE BUY OUT OF POCKET AS WELL AS HOLIDAY PARTY ETC , YOU KNOW WITH GOVT CUT BACK , COME FROM THAT MFN PLACE , VFWS ETC AS WELL

    Made this for dinner, swapped corn starch for flour cause wife is Gluten Free. Used Old Bay and Creole seasonings. I ate waaay too much cause it was so good. Just finished the last of it for breakfast and was just as good warmed up. Thanks Phil!

    I just ran across you by chance. When I saw the etoufee recipe, I am so glad I watched. I have had it in NOLA restaurants but have never made myself!! I am going to try my hand as it seems easy.     Life is outstanding with shrimp etouffee. I lived in Houston for 10 yrs and learned how to make many wonderful Cajun dishes. I loved crawfish etouffee, but I love it all. I left the state of TX in 1985. I am inspired to make this again Phil. I live where fish & shrimp are in abundance. Thank you for this video.

    Glad I found this channel, love cajun food. Justin Wilson is on RFD tv Sat . afternoon. Use to watch him on PBS every Sat at noon back in the 90s, Loved his stories.

      I first started watching *Justin Wilson* on PBS in the 70s. I learned to cook rice, much as taught here, from him. That was the beginning of my love for cooking.

    One of my favorite Cajun dishes was Catfish Acadian- which was fried catfish filet on a bed of rice smothered in crawfish ettouffee x otherworldly

    I've never had it, but sure will try it... looks so goood! Love the old black cast iron pot too... wish I had one. I save & freeze the shrimp shells to flavor dishes. Wonder if simmering the shells in with the peppers and onions might be good too. God bless ya Phil!

    Every time I watch one of your cooking videos, my mind goes back to my parents' kitchen. They cooked just like you and Miss Kay. Oh how I miss them. Especially their Cajun dishes! Oh wow! My mom made the absolute best gumbo!

    I hope Miss Kay is doing well. Saw her on “I am Second” she looked like she lost a lot of weight and not a lot of energy. Same on last podcast she was on. Praying she’s well. God Bless you Phil and Ms. Kay. You have changed my life like you never believe. Hopefully someday I can hop in my rig and head on down to get baptised was as a child but would mean so much more now!
