I have nice tip for you guys: Give two or three (or even more with such a big portion) shots of vinigar to the cleaning water. The vinigar reacts with the potato in a special way and makes the fries even more crispy.
But one big thing here : French fries are fried twice.
- first you should pad of the water wih a towel, so the oil will not bubble up so much.
- The first time with a lower temperatur (140° C) - this will get rid of most of the water and makes the frie soft.
- after a littel cooling time the second frie in hoter oil (180° to 190° C) will make it crisp.
Some people even frie them three times, but that´s optional.

Yep. You can also boil the fries in salted water for the par cooking stage. (Until the inside is cooked but before they break apart.) For the best results, freeze the fries after par cooking them. The freezing breaks cell walls and makes them even crispier. Then fry straight from frozen.
Definitely fry them twice!
U know what else u can do , take fries out of the freezer and put them in a air fryer and boom done in 15 min and super easy hahahahahahah

This Belgian approves! Nice and crunchy on the outside and smooth inside. We fry em twice and use beef tallow.

I’ve done Texas fries, S&P, S&V, Dalton Smokehouse, and even Delson (half Montreal steak and Worcestershire pub seasoning). Well done look GOOD

We did ours in olive oil and they had a great taste. Reused the oil 3 or 4 times too.. get your money's worth...

Been doing them exactly like this for years. Awesome. No need to fry twice. And yes, I've tried it. Not worth the extra effort. Especially when cooking for a crowd.
the twice fried is a great method for a larger fry, like steak fries, but fresh cut thin slices like this works perfect..

That’s how I make them. Also do the same thing while making chips
The secret is cooking them in beef fat (and not oil) and in two or three temp. Hot, hotter, etc

There are no "French fries"! It's belgian fries, using cow fat to cook them. First, 5 minutes at 150° Celcius and a second time 30 minutes later at about 190° Celcius.
Ps: never boiled them. Just wash them with clear water and remove the skin.

I bought the same potato slicer from a restaurant supply store, too. It was a life altering purchase for $50. Get a couple of different sized cutters and your crowd will love you for it. Great video.

Home fries are the best fries.
I like to chop up some sweet onion and mix with the fries and cook over a smokey mesquite fire .Gets a little mesquite flavor in the fries.

Besides getting the starch out, the water keeps the fries from turning brown. Good idea from the pit master!
i think the boys should make more videos of how the procure the groceries from the super market,like in this video what type of potatoes are good to buy for fries,what meats for grill etc.as they have covered almost all the dishes.
