I don't know about violin, but I play the piano. I'm not at that level yet, but it's entirely possible to just listen to the chords a few times and know what to play, especially if it's popsongs that use the same progression over and over. The exact pattern he's playing is something he must have learned once and now he can use that for basically every song.

Could u possibly do Careless Whisper by George Michael? 😁
Am I the only one who thinks the violinist is cute when he’s playing?
Am i allowed to fly to Australia and ask you to teach piano plz?
Do u guys actually play this by ear right then and there or did u learn before recording? (Genuine question)
Yeah to play like that you gotta throw away your tabs and learn theory

Where is Jun? Btw, you guys can i get Jun's socials?...for research purpose..;P
YOU ARE HOLDING THE VIOLIN BACKWARDS. HOW DO YOU PLAY IT LIKE THAT?
its mirrored (?)
It's not backwards, the image is flipped. You can see it by the piano playing as well, his right hand plays melody which looks like left in this video
Why do you film with image reversed? Looks like you’re playing left handed.
I mean, you're cool but if now you're making organized video only for views... I hope not
