Every states of india has its own take on spices and herbs. Like in bombay the east Indians use bottle masala which is a mind blowing awesone masala i have ever come across. The aroma is so rich. Make sure its home made and from a native east Indian. They never share their recipe to anyone. This all mix masala fused together make a wonder spice. Curry leave is another herb i love a lot. I have grown it in my garden, i took the seeds from india. I grow almost all my herbs. I believe in fresh. I even make my own masalas at home. That way i know im getting 100% pure organic masala. Its hard to trust anyone.

Not all Indian cuisine are spicy, especially the eastern Indian ( Odia in particular) cuisine tends to be more about aroma than the savoriness, hence delicately spiced.
South asian good is so vast and diverse and it all changes depending on the region and religion. I’m Bangladeshi and still learning so much about the food, it’s such a shame western south Asian restaurants are completely unauthentic and limited.
You need the mustard seeds to hit a high heat and explode. That’s the “pop” sound. But with cumin and fennel, you don’t want to burn it or else it will turn bitter. So adding it a bit later makes sense
Turmeric is bad for clothes if you happened to spill some on yourself. I LOVE cilantro. "Dirty asfetida" (I have a sense of humour) smells bad, raw, but cooked, it tastess fine, kind of like vanilla, but spicier.
I love the recipe, but why does the music in the background give off horror music vibes? Well I'd rather have a horror vibe than that youtube stock edm music

i wish i was allowed to cook in my house :( one day all i did was saute ginger and garlic paste added some garam masala for channa and i didn't hear her stop complaining for like 4 days my eyes are burning etc.... oh that might been the four little green chiles i put in after ginger garlic im still learning even if i microwave a frozen indian dinner it smells it up for like forever I don't live on my own yet cause US is shit houses too high for the interest and im partially disabled cant make it so i figured i have have the time to cook this type of food she not really that helpful I wouldn;t know then who is a good channel to use ?

Besides the many health benefits of a balanced plant-based diet, many people reduce meat in their diet for ethical and environmental reasons: ethical in that meat animals in industrialised countries are often raised in cruel factories; environmental in that modern animal husbandry is a major contributor of greenhouse gases and deforestation. As the world populations increases from 7.7 billion, for those of us who can, it's important that we shift to a more low-impact plant-based diet. According to animalclock.org/, so far in 2019, over 48 billion animals have been slaughtered in the US. Why cause so much harm to other beings, unless we truly need to? I suggest looking into the non-violence principle of "Ahimsa", Sanskirit, which encourages us to care for all-beings.

I think you're thinking of black salt? Worth a try - use a light touch, only about a tablespoon in the dish, but I highly recommend.
