Pellet smokers are soo good at roasting meat! That roast looked incredible! I hope people aren’t scared to roast whole cuts anymore after they see how good it turns out!!

It was about 2 1/2 hours but I definitely would allow a little extra. I rested it for at least an hour and man was it tender. Prolly would allow 3-4 hours including the rest.

As a south African we do alot of cooking over open wood fire( braai ). Direct heat the whole time so you are doing alot of flipping with tongs which I thoroughly enjoy. Shifting around the coals to create cooler parts in the fire to render the fat you're winging it the whole time and if you're not used to doing so you can destroy your meal lol eventually you learn all the tricks and get called the braai master. We actually have a televised competition called braaimaster that's like masterchef but they only cook on open flames go all over the country and are expected to create all sorts of dishes. Very cool show. Highly recommend. We Eat alot of game meat such as kudu, warthog etc. Very cool seeing how different it is in the states with the way smoking is such a major part in the bbq culture. It's really awesome. I know alot about braaing but very little about bbqing. Definitely going to give this a go. Will make a smoker first though Haha

Great cook on that beef. It can be intimidating to buy an expensive piece of meat like that but when you nail that perfect cook like you did, it sure makes for building that smoking confidence. I also didn’t realize the tight foil wrap worked that way to help draw out the heat. Great stuff Swine Life.

That tight rap to help slow down the cooking process during the rest was a great idea; hopefully I will never need it :)
