Yes you are right it is a sequential gearbox and there is a clutch pedal. He is flat shifting on the way up in the gears and heel and toeing on the way down to keep the back-end in check.
Look at 2:58 as he goes into the corner his left leg and right leg move in harmony to blip the down-shift to prevent upsetting the car on turn in because these porsche's do have quite a bit of weight out the back.
There's both a clutch and a clutch pedal. Going up the gearbox he's just flat shifting it without the clutch (some cars require you to lift of the throttle a bit each shift). But going down the gears he's definitely using the clutch and heel-toeing it :)

There's a clutch, but no clutch pedal. At least sequentials should work that way, and it sure does look like a sequential gearbox.
