Hi Joe! I can't stand eating chicken UNLESS it's smoked or fried. My favorite wood to smoke chicken with is mesquite. It's awesome! And have to get that skin crispy. I love chicken this way, any other way is southern fried. I can't eat chicken any other way.

I've watched quite a few of your videos and subbed I figured I'd make you my teacher I purchased a pit boss 820xl pellet smoker I'm loving it I'll definitely be doing this one.
Joe you are the consummate cook! Can’t tell you how much I appreciate your videos. I am up in Montana and trying to get ready to enter a cook off. As of now I only have a Pit Boss, which really cooks well. I am going to build an offset in the near future, but for now it’s the pellet grill. My question is “do you think a guy can compete with a pellet smoker?”
I use a five gallon water cooler, and I place the salt and other ingredients in a pan of water and bring to a boil then simmer 5 minutes, let cool then add to the cooler and stir the water then place chicken or turkey in. I use 2ltr bottles of frozen water and put on top to hold the chicken down and keep it cold.
Looks great...does the brine make a big difference in texture and taste? I've brined chicken breast but it came out a bit salty to me and with my health I need to be watching my salt intake. Thanks!
Pellet grills have their place and chicken like this is right up it's alley. But, when it comes to real smoked flavor, there is no substitution for an offset stick burner. There isn't a pellet grill that can compare. I'd say the happy medium between the 2 would be a Masterbuilt gravity smoker. You get the ease of use of a pellet grill and the smokey flavor of real hardwood charcoal and wood chunks.

Maybe you added TOO much salt. Once you rinse, and add additional seasonings just make sure you forfeit premade seasonings that contain salt as well.

You should get some Oklahoma Joe's sheers, they cut pretty well with skin, I used them when I filet fish also.
what do you use to keep your Brine Mixture & Chicken refrigerated over night? It sure looks DELICIOUS. But i won't be able to Brine it overnight.
I have a brine bucket that fits in my fridge.
That's some cooked to perfection skin ..... I need to work on that a bit on my chicken i must admit .....
