    A.餡料 filling:(24g)
    ➡️叉燒 barbecue pork 200g
    ➡️紅蔥頭 shallots 或洋蔥 100g
    ➡️蒜末 minced garlic 1T
    B.調味料
    ➡️麻油sesame oil 1T
    ➡️糖 sugar 2T
    ➡️紹興酒 chinese cooking wine 1 ½ T
    ➡️蠔油 oyster sauce 1 ½ T
    ➡️番茄醬 ketchup 1T
    ➡️老抽 dark soy sauce ½ t
    ➡️白胡椒粉 white pepper powder ½ t
    ➡️太白粉 potato starch 1t +水 water 1t
    C.水油皮 water-oiled crust pastry : (26g)
    ➡️中筋麵粉 all purpose flour 210g
    ➡️豬油 lard 60g
    ➡️40度溫水 water 110g
    ➡️糖 sugar 15g
    D.油皮 shortcrust pastry :(13g)
    ➡️低筋麵粉 cake flour 130g
    ➡️豬油 lard 65g
    表面 topping:
    ➡️ 1粒蛋黄液+1/2茶匙鲜奶
    ➡️黑芝麻 black sesame
    ➡️糖水液 sugar syrup (糖 sugar 10g+ 開水 boiled water 10g)
