The term "non-euclidean geometry", in the context of Lovecraft's work, was likely meant to portray the fact that the angles and curvature of the buildings don't conform to the typical 'rules' of our understanding of geometry. An example would be trying to view a 4D object in 3D space: it would make no sense to our eyes, and the shapes would appear to shift based on our perspective.
