How To Cook KHAO SOI | ข้าวซอย | Authentic Thai Recipe #38

  • Amy cooks a delicious Thai coconut chicken noodle soup, or Khao Soi, together with Chef Goff at Ananatara Rasananda Resort on Koh Phangan. This is authentic Thai cooking at its finest.

    Khao Soi (serves 4)
    4 servings Egg noodles
    3/4 lb of Chicken legs (deboned)
    1/2 cup of chicken stock
    1 cup coconut cream
    2 tbsp Khao Soi curry paste
    2 tbsp palm sugar
    2 tbsp fish sauce
    1/2-1 tsp black soy sauce
    1 tsp curry powder
    1/2 tsp curcuma powder
    2 spring onion /scallion
    2 shalotts
    2 pieces of pickled cabbage
    1/2 cup Cooking oil
    1 tbsp dried chili flakes

      Well.. I think it's the edit. I'm actually tasting the finished Khao Soi and not the chili oil - I'd probably die LOL. Thank you so much for always supporting my channel.     Hi Amy, just found out about your channel, love this Khao Soi recipe made by you and Chef Goff ! I also do have a Khao Soi recipe on my channel, but it's more like the amateurish version of it lol. I'm jealous of your accent too by the way, your English is very good !

      flaubertot Hi! All chefs have their own take, preference and style. In this instance Chef Goff chose not to dress it that way. You can easily add it if you want to add a bit of styling to the plating. Have a spicy day 🌶🙏

    Thank you so much for this recipe. Can you pls post what are the ingredients in the chilli oil? Just chilli flakes?

      Heat up oil (very very hot) and pour it over dried chili flakes. This is potentially very dangerous. Make sure not to reach the flashpoint of the oil and also be careful when you pour/handle the hot chili oil. Thanks for watching and good luck 🙏

      Khao Soi sauce is made from a specific Khao Soi curry paste and coconut milk. I don't have a recipe for it, but I plan to share various curry paste recipes soon. Stay tuned for more delicious recipes and culinary adventures! 😊🍛

      Thai curry paste recipes are tricky for the following reasons: If you don't live in southeast Asia with access to fresh herbs of good quality the paste will not come out satisfactory even if you follow the recipe to the letter i.e. it won't taste right. Secondly, making paste is an art that needs the cook to adjust the amounts based on the freshness and quality of herbs each time it is made, which makes it difficult to share a recipe since I can't guarantee that it will yield results matching my standards and approach to authenticity. That being said, I still plan to make a series of paste tutorials at a later stage. For now - please buy the ready made paste. There are several brands that make a half decent Khao Soi paste.

    Hello! Thank you for sharing the recipe. I would like to say will you please tell us how it taste. Is it supposed to be sweet? Or is the curry broth supposed to be think or thin? If you can tell us how the dish is supposed to taste like, it will give us a better idea of how to cook ours. Thank you.

      Kuv me Nplooj Siab Hi! Thank you for watching 🙏 It’s quite difficult to describe the taste since the different herbs of the curry paste together with sugar and umami paint a rather complex but delicious canvas on the palate.
      As for the thickness of the sauce - the video clearly shows that the sauce is runny and thin.
      Most importantly, you must have access to Khao Soi paste in order to make this dish. If you have access to the paste, Palm sugar and good quality fish sauce, coconut cream etc., and follow my process your taste should be close to that in this video.

    Great Video - I found the Khao Soi you find in Pai and other northern areas has much more sauce compared to the one made here in this video. Still an amazing dish wherever it is made. I bought some paste back from Chiang Mai and will make it tonight.
