A sunken ship is actually one of the best structures giving a lot of iron, diamonds, emeralds, food, and armour.
They also often have a buried treasure map leading to more iron, diamonds, emeralds, food, and armour ( + heart of the sea )
They also are super common, so in about 5 minutes of starting a world, you can have a lot of really good loot.
