The mixer Alvin's using is too small. The Artisan line is meant for general household use, not the kind of volumes Alvin puts in it. It'll burn out just like the last one. He should be using a Pro Line 7 Quart mixer or the 8 quart Commercial Series.

@@recoil53 I don't think basic consumer models have plastic gears. If that were the case, the gears would strip out or break instead of the motor overheating and burning out. I think it's more about the motor size and the tilt head. The tilting head of the lower end models tend to bob up and down when the bowl is overloaded with dough, which saps some of the momentum of mixer paddle. That causes the motor to have to work even harder to maintain the selected speed.

I feel like Tasty/BuzzFeed should invest in one of those giant industrial stand mixers that are as big as a person. I worked at Paris Baguette and remember that we have a giant one. It obviously makes sense for a bakery cafe that mass produces baked goods but would definitely help out not just for this show of Making It Big but also help out when they want to prep things in advance.
They probably have one but use the small ones in videos for aesthetic purposes

When Popeyes Very First Opened ( 1972 ) It was Amazing, As a 50 year old man, i can't believe the Popeyes nowadays, They gave up on themselves and the food is all Grease.
I'm a professional backer and I'd like to point out something about the dough you made. The dough was a little to soft, it needed to be a little bit more firm. If it would be firmer you could shape it better in to a ball which would bake in to a beautiful dome. Some egg yolk on top would make it a beautiful glossy golden brown. It till looked absolutely delicious though!!

OK so I personally work as a chef at popeye's and he kinda nailed it in his own way except for the chicken we dry with flour then batter then flour again and then drop in fryer also for the bread you butter then toast it
