I prefer no shaders for a vanilla let's play. Though I don't mind occasionally enabling them when to get cinematic b-roll of a build for example. But I generally prefer the vanilla textures and no shaders etc. Then it feels more immersive as true vanilla. But everyone can play how they want of course and don't let us dictate how you play the game! :)
