అలాగే ఇడ్లీ పిండి లో మినప పిండి కి బదులు మైదా కలుపు తారని అందుకే అంత సాప్ట్ గా వస్తాయని నాకు ఒక మాస్టర్ చెప్పాడు.

For all those who are commenting about the neatness with half baked knowledge on cleanliness.... Here is the analysis..
1. The main concern for the neatness is to avoid the bacteria and any germs. Not just aesthetics.
2. In that context please note that the the temperature of the oil would be more than 200 degree centigrade usually any bacteria or gems would die within 100 degree centigrade. Therefore need not to worry about the neatness. Even wearing hand gloves Would Still cannot prevent bacteria or germs.
3. The main concern for all those half knowledge people should be about the quality of the oil not the cleanliness if the oil is not fresh air filter then it would cause more harm than the bacteria and the bacteria should be a new added 200 degree centigrade of oil.
Please get your facts right before commenting.
also you shouldnt wear gloves near hot stove or oil.
Gloves are only used on cold ingridents or in serving pre cooked stuff, never in a hot environment.

Those who all are commenting about neatness..and hygiene.. let me say onething..its not an individual's kitchen where less quantity can be prepared.. its a business point and needs to be prepared for hundreds of customers..even star hotel kitchens are same like this and they also prepare in same way..the only difference is we can see the preparation here..so if anyone have problem with cleanliness then stop eating street foods.

I can understand, that less hygiene is maintained but it's street food, reasonable. They can't maintain hygiene like star hotels. Star hotels charges u according to the high level of hygiene they maintain. But every one can't afford it. Those people who eat these street foods are really healthy than, those who eat Frozen food of KFC and big food giants. Let's appreciate their hard work 🤩

4:51 he is using palmolein Oil, He is using Maida (All Purpose Flour ) both things not good for health, The way it is prepared everything, he need to add less salt because his sweat is mixing with the batter he is preparing for Bajji.

80% of comments from street food eating people complaining about hygenie etc.., but they still show up at food stalls.....if it is yak to u then pls pls go to some high garde hotel and give rs 80-100/- for plate bonda.....dont expect taj KITCHEN serving you at the rate of waiter tips in so called u r hygiene hotels.....

in mangalore its called goli bajii. Manglore was in Mysore state and most people from outside first tasted them when they went to Mysore city as tourists thus they started calling it Mysore bajji or bonda( bonda actually means some thing having a filling of vegetable or other stuff like alu bonda , but people are not technical about names)
I tasted it during my stint in the army. The cook then used to add 'saunf' and 'sugar' which I find missing here.
