Good things to try for the insides: blanched/steamed or sauteed asparagus, Al dente steamed green beans, alfalfa sprouts. For the outsides: sesame seeds, hemp seeds, flax seeds. Never thought about doing quinoa sushi ! Just for the others to know, it also works only with quinoa ! We tried it with my girlfriend ! :-) 1. Cook the quinoa with extra water on a low heat, don't hesitate to add water a second time it will make it stickier 2.When there is almost no more water and when it's sticky enough, turn off the heat, cover it at least for 10 minutes to make sure it becomes fluffier ! you need the salt, vinegar and sweetness on the rice, try it w date sugar if you don't want to use granulated white, but the sushi dressing does more than just flavor, it actually keeps the microbial activity down. Important when rice is sitting around at room temperature for possibly a few hours before eating. Leftover rice can actually b toxic if not handled properly. but your sushi looks great!
I just made some earlier after watching your video I used Italian squash, green onion, tofu and avocado. It was great and I made enough for lunch tomorrow. For anyone who makes their own kombucha at home, hear me out. Use your matured kombucha scoby as a tuna / salmon replacement. It works wonders and goes great in sushi. Be sure to marinate it with your favorite sauce beforehand. Teriyaki sauce and kelp flakes go great as a marinade. Kombucha scobies resemble a nice fish like or squid texture and the subtle sweetness of it pairs well with the rice and crispy vegetables.

You could also do zukkini or squash (cooked) as a third ingredient. That way you can have a 3 ingredient sushi. So 1 slice of avo, cucumber and either a carrot or steamed squash. I love love veggie rolls especially since I recently became a vegetarian and usually just cook one full pan full of various vegetables. But this has been so basic and minimalistic and yet it satiates you because of the carb. Eating just 8 pieces per sitting ensures you don’t over eat!. And yeah every time I eat a skillet full of vegetable I kind of feel like a pig that’s eating too much. Wrapping your steamed veggies w teriyaki sauce or eel sauce into a seaweed and just having 2 -3 rolls is also a better way to ration.

I love adding spicy mayo to mine. Which is basically vegan mayo and sriracha. Also when I want something more “meaty” I’ll also add pieces of chipotle black bean burgers in it. Try it sometime!

Turned out a bit of a disaster though, rice didn't stick and couldn't cut the seaweed because it was more soggy than crunchy. Ended up doing sushi-burrito and temaki. I had fun though! I love to put wasabi paste in the sushi, and for veggies steamed beetroot or pumpkin is good, and even arugula.

I highly recommend trying sesame leaves (perilla) instead of / in addition to the spinach which will make this a bit more like Korean gimbab. So good.
