      Hi. It has a sour smell, but that is normal because it's fermented.

      To make your own bread flour, start by measuring out all-purpose flour according to your recipe. Next, add 1 teaspoon of vital wheat gluten for every 1 cup of flour to give the bread a firmer texture. For example, if your recipe calls for 2½ cups of flour, you would use 2½ teaspoons of vital wheat gluten. During this lockdown its hard to find any flour or wheat gluten lol ;;;) God Bless Us All in these times!!!!!

    I have been watching baking videos for years but yours is one of my favorite. You explain it so straightforward, no fuss, nothing fancy, just right. Making it easy to follow and recreate. It reminds me of my mom when she first taught me how to bake. Thank you. Keep it coming.

    I made this dough last night and baked it today. The flavor was really good. In fact, out of the half dozen no-knead sourdough bread recipes I've tried, your recipe produced the best flavor result. I think the addition of olive oil gave it a good flavor and a more delicate crumb without sacrificing the crusty crust! I used the Americas Test Kitchen method of proofing the dough on parchment in a dutch oven, covered with cling wrap, and placed in a cold oven (oven was kept off) over a pan of steaming water during the proofing period. When finished proofing, removed the cling wrap, scored the dough, put the lid on the dutch oven and put it back into the cold oven, turned the oven on and let both the bread/dutch oven and the oven rise up to 425 degrees at the same time. Worked like a charm, and no need to use a banneton or cloth covered bowl for proofing and no need to preheat the dutch oven or the oven.Thank you for this delicious recipe. I will make it again!

    I do the total mix, Flour, salt mix well then add to water, starter mix. mix well and no autolyse, just 2 stretch and fold then bulk fermentation. 10 hours later fold shape then 3 hours later bake...single day baking - simple and easy. Thumbs up!

    I just made my own starter using your recipe! I’ve seen a lot of video explaining about sourdough but I never understand the process but you explain it clearly and easy to understand. I never had sourdough before in my life, I hope it’ll taste amazing🤩 Thanks a lot Gemma😇

    To all of our Canadians friends, flour in canada usually contain a higher amount of gluten due to the variety of wheat thats grown here. I’ve got great results using regular all purpose flour for bread here. Best of luck with your bread!

      I am from India. It's quite hot in here 38 degree celcius. Can I keep my dough for proofing at room temperature only?
      One more - can I prepare my starter at this temperature or should I keep it in the refrigerator?

      @@TheFearlessCooking You can try creating a starter at 38C, and see if it will stay alive. Look for the bubbling and keep track of its smell for signs that it's alive. I would think that a higher temperature means less proofing time for your dough. When proofing at your room temperature I think it would take less time. Experiment with sourdough! you wont know what works until you've tried it

    Third time is the charm! My first two attempts totally failed. I just couldn't get surface tension for the proof and ended up with loose blobs. The third time, I refrigerated the dough before shaping it and got a great result. The final product looked and tasted amazing! Thank you for the recipe and great instructions

    WOW! Thank you SO MUCH for this recipe. I am relatively new to making sourdough bread and I am so excited about the loaf I baked today following your suggestion to bake it under a metal bowl. I haven't been quite satisfied with the ones I've baked in a loaf pan, but I don't have a dutch oven and really didn't want to buy one. Today's loaf - my fourth one since I started my sourdough journey 2 months ago, turned out AMAZING!!! Thank you so much - I have enjoyed many of your recipes - they are always amazing! God Bless.

    Gemma - Bravo!! Fabulous!!
    Finally someone with simple, clear instructions for one single loaf, cup & spoon measurements and simple household items. Love, love the napkin/breadbasket tip and stand mixing bowl idea. Worked like a charm. After quite a few dense failures, and nearly giving up, I turned out a beautiful, perfect loaf of sourdough bread. Thank you so much.
    BTW I live in Jerusalem used the AP flour here without a problem.
    Now I want to try one with part rye flour & caraway seeds and and one with part ww flour.

    Thank you, Thank you. Since I’ve been working on my starter, for about 4 months now, I’ve been trying to make a loaf of sourdough bread, with not happy results. Every one I’ve made turned out like a 10# brick of dough. Yesterday I started using your recipe, and today I baked my sourdough bread, with results, I would be proud of putting in any bakery window.     Thank you so much for this lovely recipe and video. I started to make sourdough again as it's spring season here in New Zealand. Sourdough came out super soft and fluffy and chewy in the middle. The amount of salt was perfect!
    And I did my starter watching your video too. Its now 9mths old starter. Very proud to kept it alive this long

    Thanks for sharing I tried your starter recipe first three days it didn’t do anything it was a little runny...on the third day I added some more flour to it and it started bubbling it was almost like the bubbles were at the bottom hiding!!! The fourth and fifth day it was bubbling more and it smelled like starter. I baked bread on Monday and it came out really good and delicious thank you again for sharing...I love the fact that I don’t have to feed it every day and that I can put it in the refrigerator take it out add some water...that really made my day! Thanks

    I am glad i found you i made my first sourdough starter it was great 😃 but when i mixed everything together then neading it and leaven it in a warm place to rise it did not rise☹️ then neaded it again put it in a baking bag see through then in the oven on 250 for 20 mins it was a waste of time 😞 it was so flat i have some great sourdough starter in the fridge now i have found your way of making it i will try again love how you explain how to do it as on RUclips so many make it look so hard God bless you 🙏

    I made a sourdough yesterday from the perfect loaf.com. It was a labor of love that’s for sure a two day process. I bought a Bannaton on Amazon for $17.I think I’m gonna try your bread next it looks a lot simpler.

    Hello Gemma, Congratulations to you. Baby George is so adorable. Thank you for the sourdough starter recipe and this sourdough bread recipe. I love making bread and I never buy bread from stores or bakery. In my country people dont bake so much, and bread baking is out of the question. We have so many bakeries here that its much more convenient to buy bread. Yet I love to bake my own bread. I have tried many of your other recipes too during the past. As you had mentioned, Yeast is not available here nowadays. So I am definitely going to try the sourdough starter tomorrow. I was always hesitant to try it out. But you make it seem easy and your videos are so informative and clear. Thank you so much. Have a good day.

    Hello, thank you for your guide! So helpful!
    I have a doubt, The temperature here is around 26-28 deg C- Quite hot, and humid as well.
    I prepared a starter yesterday evening at around 6 pm with whole wheat flour and water. When I checked today at around 3 pm, the starter had risen drastically and was smelling sour and pungent. The starter hasn't gone flat, nor is there any mold. Should I feed it some more flour or throw it away?

      I'm using her starter recipe and videos too. If it smells sour (like bread), it's fine. Follow her instructions - remove half and then feed it

    Thank you for this recipe and video! So helpful. I’m on day 1 for ‘Sarah Starter’ I hope someone monitors comments 😳 but just really curious - the recipe says ‘loosely cover’ but I followed the video and used a large mason jar and sealed it up. As this yeast feeds on the atmosphere just hoping I’m doing it right! Excited. I love sourdough so much and excited to expand my bread baking skills. Thank you!!!

    Thank you for this video and recipe. I have just made a lovely loaf for the first time. I have tried some other sourdough recipes and found them too complicated and a bit overwhelming. I am really pleased with my attempt at this type of loaf.

    I tried it and I love the end result. Mine got a tiny bit browner than yours and I dint got those big air pockets inside, I suppose I need to let it ferment for a couple more hours. But the end result was super delicious and quite simple, and it worked! Thanks a lot.

    Loved your video Thank you :-) Question I can't have regular yeast, wheat flour or wheat bran no regular flours. I'm using spelt flour now and want to know if I can make sourdough with it? Do I need to all something to it? We so love sour dough Help me find some way of making it.

    Hi Gemma. Your recipes along with the way you instruct are awsome_fast and easy :-) Thanks.
    3 questions:
    1. after i use the sour dough starter on day 7, how do I maintain the rest of it for future use: feed and keep it in the fridge? no more room temperature. This is what I understood from your video. Please confirm. In that case what if I want to make another loaf on day 8. The feeding + fridge time (over night) will give me enough yeast and functional to use?
    2. where to buy your collection of mug meals (only)?
    3. what is the volume of the mugs that you use for your mug meal demos? I don't think your are using the 250 mL, looks smaller like a tea cup.

      Hi. In baking, oil helps in the lubrication of dough, for ease of dough handling and its expansion. It makes it easier to slice the bread once it is baked. It also tenderizes baked items and helps in prolonging shelf life by slowing down retrogradation or staling. I hope this helps.

    ms gemma, after proofing for 18hrs...can i cut the dough before balling them? my banneton is a bit small and I have 2 of it so I was thinking of splitting the dough so I can create 2 sourdough bread?

    When I saw your last video on the starter I pulled mine out from the fridge, it has been kind of neglected but it is still alive it is now 3 years old actually as of 4/8! I have made 2 loafs of bread and waffles. I’m giving a jar to my mom along with one of the loafs later today. I can’t wait to try out this recipe though ❤️

    Gemma, I love your recipes and videos, they have helped me so much! I have a question about sourdough, I tried two months ago, but should never get my starter strong enough. I’m thinking about buying a starter, do you sell them, or do you recommend anyone?

      Sorry I don't. What did you use for your starter? Make a few changes, you'll be grand !
      From now on, feed your starter at water: flour: starter ratio 1:1:1, twice a day (roughly every 12 hours) and keep it over the counter. Use unbleached (no chemicals) all purpose flour or unbleached bread flour. Whole wheat flour has more bran which will weigh down your bread to make it difficult to rise.
      Use bottled water instead tap water which may have chemicals to slow down or kill your starter ( same thing applies flour). Warm it to around 45C or a little bit warmer than blood temperature.
      You should use your starter when it's close to or at its peak time to achieve the best result including best oven spring. Each time it behaves differently. I suggest you take time to learn your starter better. To watch the highest point it can get . To test whether it’s ready to use: mix your starter to distribute bubbles evenly then drop a spoonful of starter into a bowl of water. If it floats, it’s ready to go.

    Nice information. I’m kind of new to bread baking maybe a few years - i’m retired and a guy who loves to cook (now bake). I started with yeast breads. Just now trying to make my first sour dough starter. I also about a year ago bought my own grain mill. I did find some of my recipes with fresh red wheat berries needs adjusting - normally a little more water. Do you think this one will work with 1/2 whole grains (milled wheat) and 1/2 all purpose?

      Technically, it is possible. I haven’t tried it so I can’t recommend proportions to get the best result.
