    Speaking of the baggie as a weight, one thing, I like to do is to find a small little plate or a saucer and put that inside. I’m not sure I would probably use the plastic. I’m so worried about plastics leaching into what I’m consuming but I can definitely seethat it could be used as a tool. This is a really great video. Thank you for sharing.

      So we use compostic baggies that decompose in the compost! They’re so awesome and i call them “plastic” but they are vegetable cellulose! Go check them out! But you can add glass fermentation weights too, as mentioned! Or a plate! Right on!

    I'm glad I watched this all the way through to the end. Although we are a "honey fermenting" family and have done this now for two years. I thought it wouldn't hurt to see if I could catch any of Tonya's insights. The recipes I have sourced in the past admonished to not allow it to ferment on the counter for more than 48 hours. Have we been dosing with "weak sauce?!?!?!" I have to put another patch of honey medicine into play. I'm gonna do the one week on the counter, one week fridge method you indicated here!

    After the fermentation is done and you strain it, could you use the lemons in like a tea?
