Thank you for filming your process. I’m with you and I really enjoy thread basting the fabric to the papers.
I don’t have a design wall either and have found the best way that works for me is to lay out sections and then take a pic on my phone. Then I stack the hexies in piles and have my phone to reference what comes next.

I'm looking at all the directions I can find on RUclips about making hexagons. And I've happened on yours!

If you are right handed, it is easier to baste the hexies counter-clockwise. If left handed, then go clockwise. Our hands work best this way.

Mine are by the brand Sew Easy. I get them from Spotlight, a fabric store but you can buy them online as well
