    INGREDIENTS:
    (The cup I use is 200ml)
    Heavy Cream(35% milk fat)
    Vanilla sponge cake:
    2 eggs
    3 tablespoons of sugar(50 g)
    2 teaspoons of honey(15 g)
    a pinch of salt
    3 tablespoons of warm milk(20 g)
    4 tablespoons wheat flour(65 g)
    5g vanillin
    1 tablespoon melted butter(20 g)
    Cheesecake cream:
    4 tablespoons cream cheese(170 g)
    1.5 tablespoons of yoghurt(70 g)
    3 tablespoons of sugar(50 g)
    1/2 tablespoon lemon juice
    5g vanillin
    5 g powdered gelatin (3 teaspoons)
    25 g water (4 tablespoons)
    4.5 tablespoons heavy cream(140 g)(%60 whipped)
    Tangerine puree:
    300 g tangerine
    2 tablespoons of sugar(30 g)
    Tangerine gel:
    150 g tangerine puree (about 120ml)
    4 g powdered gelatin (2.5 teaspoons)
    20 g water (3 tablespoons)
    Tangerine cream:
    80 g remaining tangerine puree
    55 g remaining cheesecake cream
    red food coloring(optional)
    2 g powdered gelatin (1 teaspoon)
    10 g water (1.5 tablespoons)
