  • Steven Rinella breaks down how he and several members of the MeatEater crew contracted trichinosis after eating some questionably cooked bear meat on a recently aired episode of MeatEater.
The moral here is this: ALWAYS cook your bear meat to a minimum internal temperature of 160 degrees Fahrenheit!

Yes, you do. Once the larva spread new (baby) larva are born in your muscle, and other tissues, in their calcified capsules. Like Rinella said, the only way these capsules can be destroyed is with stomach acid. This means Rinella is walking around with living Trichinosis larva in his body, it's simply not active until their capsules are dissolved... ie Rinella becomes some poor bastards brunch. ;)

Thank you for this video. I have hunted for 30years mostly deer, Turkey, small game , waterfowl , and upland game.
I got sick after a dove hunt. I think it must have been a mild case of salmonella or similar. The dog had the birds in their mouths, I handled the birds with bare hands. But I did not consume these birds I gave my limit to another hunter.
Symptoms; for about 3-4 days I defecated white stools that had the consistency of a white mucous. No stomach pain or intestinal pains, it cleared up so I didn’t go the Dr. I guess it could have been worse.
Also one time I was field dressing a deer and I could see a worm in its guts. I field dressed it and moved on, I assumed it was not in the muscle tissue, I took it to the meat processing plant - which turned it into salami , deer stix and hamburger which I assume killed anything bad as mostly hamburger was cooked well and mixed with beef meat and beef fat. No reported ill affects.
Be careful out there people cook wild game well. I am not an expert but I know you can get sick and badly.

There was a wild game processor in SC died of organisms from cleaning and butchering for folks, they think he had a cut and was not wearing any gloves, it was from pig, they did not figure it out until the autopsy. Modern food technology has safety methods in place and the exposures are not seen in most hospitals to know what to treat..

Just watched JRE, the guy from living below zero. Even he says Bears are filthy animals full of parasites and it’s Not from just the meat! It’s their fur as well which has has worn eggs that can survive most conditions and easily get ingested thru your nose and mouth to hatch and burrow into your brain and/ or eyes. He only ate Bears out of pure necessity but he did enjoy the Fat; I do remember that.

Nah, just gotta cook it better. You can only contract it from undercooked meat, if he cooked it good then he would have never got it. This worm works the same way as a pork tapeworm and that's why they always say to cook pork good. Everyone has eaten tapeworm cysts in their lifetime if they eat pork so it's the same concept with people that eat bear meat, just remember to cook that meat good and you'll be fine.
