Hello. Thank you for the info. I am just starting to make bread with a bread maker. I really like that you can put your ingredients in the night before, and then set the timer. I'm a little confused though. I've watched a couple other videos on how to make bread in a machine, and I've heard that yeast doesn't do well with temperature changes, and that I should keep my yeast in an air tight container in the frig, and when taking it out to use, I should put the yeast right back into the frig. So, what do you think? Does the yeast work as well if it sits in the bread maker overnight, as it does when it is added just before your machine makes the bread? Thank you.
How do I convert a 2 lb. bread machine recipe to a 1 lb. bread machine recipe? Do I just 1/2 all the ingredients? If so does that include the yeast? I just purchased the mini Zojirushi 1 pound machine.

Hi! I recently bought the same zoji that is shown in this video and I follow sue’s recipe for the basic bread, without the optional ingredients (egg and gluten), and my loaves keep coming out very heavy (dense) and they sink. Can anyone please tell me what I need to do to make them feel more fluffy and keep the dome shape?
Hello. There can be a few different factors contributing to the heaviness of the loaf. I would start by answering these questions first. What kind of grain are you using? Are you using fresh yeast and where are you purchasing it from? And last, what is the temperature of your water?
@@BreadBeckers Hi! Thank you for responding. I’ve tried all hard red, then a loaf with half hard red half spelt, then half hard white half hard red. The yeast is freshly purchased from the grocery store- Red Star Quick Rise, and my water is hot but not too hot to touch. I microwave it for a minute.
There is a recipe book that comes with the Zojirushi but it is not specific to Bread Becker recipes. It is just a general recipe book for the bread machine.
In bread machines, you gently put the yeast over the dry flour. All bread machine manuals tell that the yeast should not touch the water or the salt until it starts the kneading process. Order of ingredients is always water first then dry ingredients and finally yeast sitting on top.

I will try cutting back a bit on the amount of flour. If I do that, do I need to cut back on the amount of water as well?
Will the whole recipe for the Ezekiel Mix fit in the machine? Or do I need to half the recipe?
The bread machine will make a 2 lb loaf. That is about 4-1/2 cups of freshly-milled grain. Hope this helps. Thanks for asking.
