  • Join me, Eric Blyth on my RUclips channel Greybeard Adventures as I take you foraging for the very special LOBSTER MUSHROOM! Despite their vibrant appearance, lobster mushrooms (scientifically known as hypomyces lactiflorum) begin as a dull host mushroom, which a parasitic fungus transforms into a striking, delicious, edible gourmet variety. These beauties are prized worldwide for their seafood-like umami flavor and stunning color. They begin appearing in late summer, though they're more prolific in autumn after it rains, and they're quite easy to spot and identify, given their distinct appearance and bright orange color.
    In this video, you'll get an idea where to hunt for lobster mushrooms, how to identify lobster mushrooms, how to clean these wild lobster mushrooms, as well as a simple recipe for cooking lobster mushrooms.
    While lobster mushrooms don't have any close lookalikes, keep in mind that as with all mushrooms, it's important to consult numerous sources and be 100% certain of identification before foraging and consuming.
