- Campari is an unmistakable, vibrant red Italian bitter that is at the heart of some of the world’s most famous and well-loved cocktails, such as the Negroni...but for some it is overwhelmingly bitter. So here are my cocktail recommendations to introduce someone to Campari that doesn't actually like the Italian bitter liqueur. You'll be surprised I'm sure!

JUNGLE BIRD
The Jungle Bird was served as a welcome drink inside the Kuala Lumpur Hilton Hotel’s Aviary Bar. Jeffrey Ong created the cocktail, and it was served to guests upon their arrival at the hotel from the time of its opening in 1973.
1½ oz (45ml) dark Jamaican rum (or blackstrap rum )
¾ oz (22.5ml) Campari
1½ oz (45ml) pineapple juice
½ oz (15ml) lime juice
½ oz (15ml) simple syrup
ENZONI
The Enzoni cocktail is a cross between a Negroni and a Gin Sour where the sweet vermouth comes in the form of muddled green grapes.
5 green grapes, muddled
1 oz (30ml) gin
1 oz (30ml) Campari
¾ oz (22.5ml) lemon juice
½ oz (15ml) simple syrup
BITTER MAI TAI
The Bitter Mai Tai is a creation of Jeremy Oertel, creator of several modern classics including the Artichoke Hold and Brancolada.
1½ oz (45ml) Campari
¾ oz (22.5ml) aged Jamaican rum (Smith & Cross recommended)
½ oz (15ml) dry curaçao
1 oz (30ml) lime juice
¾ oz (22.5ml) orgeat

Jungle Bird is what taught me how to love Campari.

Me too! The 12 year old Appleton is not a bad choice but I had some Black Strap rum and used that and I really prefer those maple notes. I also made an acid adjusted version and it turned out even better! I'm slowly making my way through that damn Campari bottle lol

The Bitter Mai Tai is such a crushable drink. The relateively small amount of Smith and Cross does a lot of heavy lifting in it without overpowering the other ingredients.
I would also like to mention the Bermuda Hundred cocktail (Gin, Campari, Pineapple Juice, Lime Juice, Orgeat).
Tastes really great and that's comming from someone who doesn't like Campari very much :)

Your elevated Paloma recipe with with the grapefruit cordial is another excellent example of a campari cocktail for people who hate campari. Really an awesome drink has helped me get a couple people more into making cocktails

You got me on enzonis a few years ago and it instantly became one of my favorite cocktails ever. Jungle bird is also my favorite tiki cocktail. It's definitely my #1 recommended campari introduction cocktail. There's now way you can't like it.

My new favorite drink (with Campari) is now the Enzoni but with 9-10 muddled grapes. When I get enough grape I don’t mind the bitter Campari. And that has to be one of my favorite colors for a drink.

I luv Campari. First time i tried it i was in Italy and then i started trying Campari Cocktails including Negroni , and since then i fall in love. I'm Whiskey guy all day but Campari made it to my heart ♥️

great video! I've had all of these cocktails before and loved them and I hated Campari before I got into cocktails.
Finally made a jungle bird and I thought the Campari really complimented the rum/ pineapple juice, very nice for a warm summer day or BBQ
My go to drink is a Boulevardier; so I like Campari. I also like Mai Tai’s, so I’ll have to try the bitter version!

The Jungle Bird is my favorite Tiki drink. If I want something a little sweet I make this. I like it with a blend of Dr Bird & Hamilton Demerara

As well as splitting the campari with aperol, I find that a small pinch of salt helps temper the bitterness of campari

I'd say the Jungle Bird is probably the best cocktail for people to get into Campari. Back when I used to not like Campari (I can't even imagine such a cardinal sin, now) I still liked Jungle Birds. The tropical flavors and sweetness helps cut the intensity. Nowadays I love Negronis, Boulevardiers, and Bitter Mai Tais, but it's all probably thanks to starting with the Jungle Bird.

The "gateway trick" I've used to convert some Campari-haters around me is to make negronis with 50/50 Campari and Aperol (sometimes even heavier on Aperol), and gradually use less and less Aperol ;-)

Ive made straight Aperol Negronis for my girlfriend who dislikes Campari, but it's still too bitter for her. So i guess i will try some of the drinks from this video ;)
my girlfriend hates negroni, even aperol ones, so i started giving her Aperol enzonis and then slowly used this trick..
@@Laugk I tried that when I was out of Campari but had Aperol, I found it was unbalanced and was shocked that it just didn’t work. But the half and half trick and/or adding some simple or even elderflower could help, just a thought if you want her to try again 😊

The ultimate cocktail for me to win people over is the "Chestnut Cup".
It is 30/30/30/22.5 ml Gin/Camapri/Lemon juice/orgeat.
It is the perfect combination of sweet, sour and bitter. And if you want to tiki that up, make Bermuda 100s.
I'm using Aperol instead of Campari, it makes not so bitter. Great cocktails, Enzoni is my top 5 coctail

After34 years on this planet of which more than 11 years in the industy, I´m still dreaded by Campari, I try every now and then to appreciate it, but it´s something I haven´t really managed, yet.... Still very nice cocktails though, Steve!! I might give one of them a try someday and I´ll keep you updated about whether or not my palette is developing a bit more into the Campari direction ;-)
I never realized until now when I got my first shaker how hard it's to smile while shaking that damn thing, but I won't quit until I am as confident with the drinks as Steve. So far I have managed to create some tasty cocktails with these recipes but the execution has left something to be desired, as the one woman government also known as my dear wife will witness while cleaning up the kitchen out of all excess liquor and sticky sugars, but so far judging from how I am allowed to keep practicing the hobby while serving her some tasty cocktails we are still on the net positive.
The lovely pink color on two of the drinks made me think of grapefruit, and I wonder if you have any favorites that combine the two (Campari and grapefruit)?
I’m sure that’ll turn off the bitter-sensitive, but I _like_ a certain amount of bitter, balanced out with sweet, acid, etc. I’m certain there’s a refreshing cocktail to be found.
Hi Michael, there's a recipe for a drink called siesta you can find on bon appetit and other sites.
2 ounces tequila blanco
¾ ounce fresh lime juice
¾ ounce simple syrup
½ ounce Campari
½ ounce fresh grapefruit juice
Lime wheel (for serving)

I just came up with a 'Wide Eyed Jungle Bird' on my show, combining an altered version of the 1971 recipe with Mr Black. It's super tasty.
Sadly, I made it with Doctor Bird, so you can never fully experience it in Australia. Very sad times.

That Dr. Bird is super funky! I have yet to find a cocktail where it doesn’t overpower all the other ingredients. I made that ultimate mai tai from the other week and it’s amazing! I added 1/4 oz of Dr. Bird to that recipe to see how it would change the flavor profile and that is all I tasted. Some serious funk right there! Lol

Hey Steve I’ve been drinking dark rum and stones ginger wine for years but could never figure out what bitter to put to make it more dynamic. Do you think campari would work? Equal parts built over Ice with a orange twist. Love to hear what you think
Hey Steve. Made the mistake of taking a mouthful of Campari the first time I had it and was like WTF 😂. Excuse my French. It was a gift. Should’ve looked it up first.
These 3 drinks are pretty. Don’t care for gin but will try any drink as long as it has some degree of sweetness in it.

I wanted to try a Negroni but I was afraid to commit to a bottle of Campari because I’d never tried it. Finally broke down and got the bottle and well, it was a bit much! Just made the bitter Mai Tai and it is fantastic!!! Looking forward to the other recipes and learning to love Campari

Enzoni also works with purple grapes, especially if they're pretty sweet. I don't think I'll EVER like a plain negroni

Cruzan blackstrap if you can get it… it’s not available here in Australia unfortunately. Otherwise you could try Coruba.

Another campari drink is the jasmine. It tastes like grapefruit juice.
With my bitter-averse palate, I prefer to stick with the full 4 oz of pineapple juice. And I use a heavy Jamaican rum to stand up to everything. For the record, I think Cruzan Black Strap is pretty much the worst rum for a Jungle Bird. To my palate, it makes the drink taste like industrial waste

Funny enough, coming from someone biter-averse, I find the Bitter Mai Tai much LESS bitter than the Jungle Bird, even with a full 4 oz of pineapple juice. Something about my palate makes me find PF Dry Curaçao Mai Tais extremely sweet, and obviously that much more so with 3/4 oz or orgeat. So to me, the bitter Mai Tai is perfectly balanced: the Campari undoes the excessive sweetness of the drink, and the Curaçao and orgeat balance the Campari's bitterness to the point that the drink doesn't taste bitter to me at all
I still think Campari is disgusting but by changing the ratios of the Bitter Mai Tai to 3 cl campari : 3 cl dark rum : 1.5 cl triple sec* : 3 cl lime juice : 2 cl amaretto** I got a drink I find quite tolerable.
* I figure cointreau can sub for dry curacao which I can't easily buy here.
** I cba to make almond syrup and it's next to impossible to buy premade here so I assume disaronno works as a sub.

I can see that being something I come back to, but I'd have to be in the mood for it if that makes any sense. Lol

Actually, the Jungle Bird was the drink that made me realize that I hate Campari.
Don't have to tolerate Campari, just switch for Aperol. Problem solved! ;o)
