If it’s still relevant you would put a pull down resistor 10K from the negative pin to the touch pin, then positive with the switch and a 1K resistor then it should work 😅

No, because mic induces only up to 1V AC. Maybe electret mic but again not sure if it worked. Gate needs at least 5V potential to be able to conduct. Human body has a lot more so it can activate the mosfet
its an N channel mosfet. when you give positive to the gate the led glows, when you give negative to the gate the led dims. so he changes the wire which he touches after each glowing and dimming. he doesn't shoot this in the camera. So he is faking there.
You are no engineer. This device is not a touch switch and will not function as such. The gate will charge or discharge unpredictably due to either static or capacitive coupled ac potential.

With a big load yes you need a heatsink but I recommend wiring it with relay so the MOSFET doesn't heat up so you don't need a heat sink
