Yay, thank you for proving that I'm not crazy inventing ways to cook minced meat. I use whole Barley or Oat flour instead of bread. It holds the meat together, the whole thing stays moist and tender, stretches the size of the portions and helps me avoid white bread. I make burgers this way too :)
I don’t eat so much in the way of grains anymore, but I still imitate my mom at times. With a family of seven, heels of bread were always in the oven, and they turned into things like bread pudding, stuffing, bread crumb toppings for her amazing macaroni and cheese casserole with sharp cheddar cheese, cottage cheese, eggs and tomatoes inside of it.

One should experiment with spices in the mince(wich could also be substituted for lamb or a mix of beef and pork). I would go for something like ground Cumin and smoke paprika, red pepper flakes (something that most people have already in the kitchen), and even some lemon (or if you have it, sumac), crushed cloves of garlic and chopped parsley.
I love Jamie and I cook his recipes often. Definitely good for the home cook. But I don't understand why he never seasons his food properly. I don't know maybe it's my pallet but I've followed his recipes before and he leaves a lot of things unseasoned. If it was me, I would put the veggies in a bowl and toss them with salt, pepper, oil, and maybe a squeeze of lemon juice, and then put it on skewers. Just a tip to anyone using his recipes. Season everything a little as you go. Because if you follow his instructions to the letter it's going to be bland. But other than that it's great.
Where we going with this customizing our face based on it's texture. 1-4, 2-20 , 2-100, 100-2000 - it's a website company employees size. Maybe it's multitasking thing grabbing too much different types of presidential bread after opening dog food can, because it does not eat everything. Surely you aren't watching me with a satellite. It's spring and summer soon, everybody will be cooking these.
While I do appreciate the sentiment of trying to stretch how much food you can make on a very limited budget, I think that most people are eating too much carbs and too little protein, this results in people being walking clumps of dough.

This is not kebab. You have to put spices into the meat before making meatballs.
