I'm gonna try step 1 w variations. Before going in covering slices in mustard, garlic salt, & pepper. And I'm going to cut the temp by at least half and double the time. Then when it's time to flip, I'll add a BBQ sauce of some type and gradually increase the temp to achieve "burnt ends"
