    Hello..mr khoo...I that you mention alot of nyonyas in penang...I think you forget that..not only in penang you have nyonyas but in malacca too..you can find many nyonya lives there...there lives among the malays ,serani(portugees),indian and other races...you frequently..mention penang..and nyonya...but...in malacca you will find..more and many nyonya..than in penang and singapore...curry kapitan is also very popular in malacca...this one of our home dish that we cooked..often..as home menu...Mr.Khoo..once in while..you must visit malacca...to see..the nyonya peranakan...here..try theirs food...and culture....From Malacca with love..😘🇲🇾...

      Hi @omma Leiman…Yes, I am fully aware that Malacca has a rich Peranakan tradition and food culture tracing back to the Straits Settlement period. But my viewers may not be aware and I am thankful to you for sharing your comment and information with me and with them. I have been to Malacca when I was much younger, at least 3 decades ago and I really enjoyed your hometown, culturally rich in history with incredible historical sites from Dutch, Portuguese, and British during colonialism time. I have also tried the Nyonya food although I have to admit that I lack the knowledge as I am sure there are differences between Malacca Nyonya food and Penang Nyonya food. I have a college mate who is a Malacca Baba. Recently he and a group of ex-TARcian came to visit me in Penang and we went to a Nyonya restaurant. He was sharing his Nyonya culinary knowledge with me and make comparison between tastes. I am also aware that Singapore has Peranakan tradition and their own style of Nyonya food. My dream which hopefully I can realise it next year is to travel around all the states in Malaysia to re-educate myself on the history, food and culture, and I would definitely love to revisit Malacca again. I am sure I have a lot to learn from my fellow Malaysians. Cheers, Victor

    Your story reminds me of the fictitious origin of nasi lemak name. When a daughter served rice cooked in coconut milk, her mother ask what it was. She replied Nasi le, Mak. I think the name Kari Kapitan came from the luxurious use of ingredients and long cooking times that a Kapitan's cook can afford to buy and use.

      @@stever456 thanks...I do agree it is not easy to follow a recipe video. In the past, I read recipe books...before RUclips became popular. I still do. I suppose I am still an old school. I think reading written recipe is slightly harder as you can't really watch how it is being cooked. It definitely helps with a bit of skills in cooking to watch and learn new recipes. Cheers, Victor

      @@foodtripwithvictor Just cooked one of these mainly following Marion's recipe but im still waiting for the candlenuts, what flavour do they give? I'm inclined to try your version which has the fresh turmeric and tamarind. Do you have a link for the ladle you used for removing the oil from the curry?
      It is quite hot but didn't blow my weak European white head off like one i had at a restaurant in Birmingham UK near me called Malaysian Delight (google it). Theirs killed me and made the staff laugh as i struggled to cope with the heat.

      @@stever456 …candlenut doesn’t add any flavour to the dish. It’s mainly used in Malay cooking to thicken the gravy or sauce. It is used as a thickening agent. The local Chinese learnt this from the Malay when they first settled in Malaysia during the Chinese Straits Settlement.
      As for the ladle to skim the surface off excess oil or scum, I got it at a local Asian supermarket. I asked Google and found this on Amazon, www.amazon.com/KINGSUPER-Skimmer-Stainless-Strainer-Skimming/dp/B07K7GG2GK/ref=mp_s_a_1_3?crid=35LM39X9PS1F9&keywords=chinese+strainer+for+skimming+oil&qid=1653097493&sprefix=chinese+strainer+for+skimming+oil%2Caps%2C437&sr=8-3
      You may want to do more googling to see if there are other sites to compare the price.

      Hi @H Pham..good question. Personally I have never bought or use tamarind powder. I know of a jarred tamarind purée. I guess you should be able to use tamarind powder the same way but I would suggest try adding just 1/4 or 1/2 teaspoon mixed in the liquid and taste the curry gravy and adjust accordingly to your own liking. And if you like. Before serving give a squash of maybe 1/2 fresh lime over the dish. Cheers, Victor

      Hi @BlackPear Lily...lemongrass has a distinctly unique flavour. A bit lemony, citrusy and minty, a bit of a fibrous bite in the curry. I guess you could try adding some lemon zest while you are boiling the curry. Then add some finely shredded fresh mint leaves when the curry is almost ready to serve. I am thinking through it in my mind and imagining how it would taste. I haven't tried this as it is easy to get lemongrass here. You don't have to buy fresh lemongrass. If you have Asian grocers nearby, you may find frozen lemongrass either finely chopped or sliced in the freezer. It keeps for months! Alternatively, try without the lemongrass and see if you enjoy the flavour without it. It is all down to a personal taste. But in Nyonya cooking, lemongrass is commonly used to give the dish a distinctive and unique flavour, when combined with other spices and ingredients. Cheers, Victor

      @@foodtripwithvictor Many thanks for your kind reply! I will try with these substitutes as you suggested. I used lemon grass a lot in cooking when I lived in America, it was easy to find it. When I moved to Europe I was even thinking of planting lemon grass in my vegetable garden, as I cannot imagine my life without Asian cooking. I cook Thai, Vietnamese, Korean, Japanese, with Korean being my favorite. Malaysian food I ate only in restaurants, and now I want to learn more about it. I will therefore look more into your videos on RUclips. Best regards!

    My grandma used to cook this, but after she passed on, I have never got a chance to eat her Curry Kapitan anymore and there wasn't any written recipe😔. Now with your video n recipe, I had cooked this dish twice. I blended the paste n stored in a jar, so I can cook this dish whenever I need it. Thank you😉🙏

      Hi @Lim kim heng Heng..Of course you can..but don’t add too many or cook the potatoes for too long. One way you can do is to boil the potatoes in a separate pot of water first until it’s halfway cooked. Rinse them and then add into the curry. Cheers, Victor

      @Preeti Das…”belachan” is Malaysian shrimp paste. You can use the Thai shrimp paste, which is more commonly available at the Asian supermarkets depending on where you live. You don’t have to use it if you can’t find it. Candlenut is used as a thickening agent. This is optional. You can gently boil/simmer until the curry gravy is reduced and slightly thickened.       To me, Asam (or tamarind in English) gives the dish a distinctive sourness quite different from using lime. "Asam chicken" can mean anything depending on what ingredients go into making the dish. It is not the same as a curry kapitan chicken, which is a curry dish making use of several different spices to create the flavour. Cheers, Victor
